Vegan-ola

Just may be my favourite recipe that I have ever posted! Super simple, super healthy and more-ish in every way! This is one of my Sunday batch-cooks and keeps us snacking healthy throughout the week. Loaded with macro and micro nutrients, this Vegan-ola will become a staple in your home. There’s no going back now!

Prep Time: 25 min

Ingredients:

1 cup puffed amaranth

1 cup organic rolled oats

½ cup raw macadamia nuts

½ cup raw cashews

½ cup pepitas

½ cup sunflower seeds

½ cup shredded coconut

½ cup raw buckwheat (buckinis)

¼ cup chia seeds

¼ cup hemp seeds

½ cup coconut oil

½ cup maple syrup

1tsp ground cloves

1tsp ground cinnamon

Optional: dried papaya, dried apple or crystallised ginger

Method:

Heat oven to 120C. 

Line baking tray with baking paper.

Add all ingredients into a bowl and mix together – ensure all dry ingredients are coated with wet ingredients.  Spread evenly on baking tray.

Bake in oven for 15 min – (Vegan-ola can burn easily so stay close and keep checking!)

Once lightly browned, remove from oven and allow to cool. 

Break up and place in a tightly sealed jar!

    I loved your talk on cape talk. I am trying to move to vegetarianism I loved your term flexitarian! You inspired my journey to continue it does go through challenging patches. You are a great speaker! Keep going thank you.
    I am going to try some of your recipes . We already eat a lot of your products.
    My daughter is 11 and only eats chicken at the moment and no other meat so I am trying to support her, she is naturally very thin like me so I want her to get all her nutrients. It’s a process I suppose.
