*note to moms – exclude the chilli powder and #guaranteedlove
Tacos with #FrysFamily Battered Prawns with Cilantro Lime Cream.
Make the Cream first and place in the fridge whilst you cook the prawns and assemble the tacos.
Cilantro Lime Cream
3/4 cup raw cashews
2 cups of water to cover cashews
1/2 cup fresh cilantro (coriander)
1 large garlic clove
1/2 teaspoon garlic powder
5 tablespoons water to add to the blender
3 tablespoons fresh lime juice
1/2 teaspoon Himalayan salt
Cover cashews with boiling water and soak for approx. 1 hour. Alternatively, you can soak the cashews in room temperature water for 8 hours or overnight.
Drain and rinse the soaked cashews.
Add all of the cashew cream ingredients into a high-speed blender. Blend on high until a smooth cream forms. Add water if needed.
Fry’s Battered Prawns
1 pack Fry’s Prawns – defrosted
Pinch Chilli powder (optional)
1/2 tsp ground cumin
1/2 tsp smoked paprika
3 tbsp sesame oil
Stir the spices into the sesame oil.
Dip Prawns into the oil.
Grill prawns (or use the airfryer if you are one of the lucky folk that own one!)
Burritos or Tacos – baked or warmed
1/2 red pepper, chopped
1/2 pomegranate, deseeded
1/2 avocado sliced (use the remainder of the avocado from the lime cream)
1 cup shredded lettuce
Salt and pepper, to taste
Handful of fresh coriander for garnishing
Assemble to tacos using all of the ingredients and season to taste.
