To celebrate World Vegan Month and Meat Free Movember, I thought I would share one of my favourite recipes.
Not only is this burger packed with flavour, it quick and easy to make and rich in plant protein and Omega 3’s!
Meat Free Movember Schnitzel Burgers
Makes 4
Time required: 10-15min
Ingredients:
1 onion, sliced
4 burger buns (or replace with a large Portobello Mushrooms – recommended)
4 Fry’s Family Soy & Flax Schnitzels More on Fry’s Range here.
1 Avocado, sliced
Handful Rocket lettuce
Tomato Relish (recipe below)
Method:
Sauté onions until browned.
Place the Schnitzels in the oven for 10-12 min (or in the toaster if rushed for time!)
Build the Burger using the fried onion, Schnitzels, Avocado and Rocket.
Serve with tomato relish.
Tomato relish:
Makes a jar (store the rest in the fridge) – takes some time so make on a rainy day!
1 tin chopped tomatoes (or 5 freshly chopped)
2 tsp Himalayan Salt
2 onions, chopped
2 tsp curry powder
1 tsp mustard powder
100ml apple cider vinegar (Braggs)
1 red chilli, finely chopped
2 tsp stevia or monkfruit
1 tsp rice malt syrup
Method:
Mix together curry powder and mustard powder with a little bit of the vinegar to form a paste.
Place chopped onions, salt, tomatoes, curry mixture, chopped chillies, stevia, and the rest of the apple cider vinegar in a pot. Bring to the boil then reduce heat and simmer for about 30-40mins until reduced. Stir to prevent burning.
Pour into a jar.
Store in the fridge.

Thanks Anthea…the Fry Family Range does make the transition to a plant based diet much easier. A mushroom burger just isn’t the same for a meat eater transitioning!
