So I am quite a salad freak. Love salads and when I say salad I dont mean lettuce, tomatoes and cucumber…I mean protein packed deliciousness and plenty fresh ingredients on a plate! NEVER be stingy with a salad.
Suggest increasing quantity and keeping leftover in fridge for up to 3 days. Great for a snack or lunch side
Ingredients:
1 cup Cooked Quinoa (cook quinoa in vegetable stock for more flavor)
1 grated carrot
1 stalk Finely chopped celery
10 almonds chopped and roasted
Shredded coconut
Handful (1/3 cup) chopped coriander
Method:
Mix together to make up a salad
Vinaigrette:
60ml lemon juice
30ml water
60ml olive oil
2 tsp white vinegar
1 clove crushed garlic
Oreganum, salt and pepper to taste.
