So my fascination for all things quick-to-make and nutritious has found me looking for the perfect snack for the kids and myself. Something with protein, carbs, good fats and of course, sugar free. These bars rate pretty highly on my health rating. In fact, I give them 5 stars!
I heart Amaranth: Amaranth is packed with digestible plant proteins. It is also loaded with calcium, iron, lysine (a great amino acid) and magnesium. Yes, it is almost perfect, which means it makes the superfoods list!
Seed & Amaranth Snack Bars
VGN/GF/FRUCTOSE FREE
2 cups oats
¼ cup puffed amaranth
¼ cup pepita seeds
¼ cup sunflower seeds
¼ cup sesame seeds
1 cup desiccated coconut
1 tsp vanilla essence
1 tsp cinnamon
½ cup coconut oil
½ cup rice malt syrup
Method:
Set oven at 180C and line baking tray with baking paper
Mix together all ingredients
Press into baking tray about 1cm thick
Bake for 20min (keep a close eye on the bare)
Remove from oven and allow to cool. Cut before completely cooled as th bars harden and they become more difficult to cut.
Store in a jar.
Great for lunchboxes, snacks on the go or crumble over a bowl of coconut yoghurt, drizzle with berry compote for another snack option. Dont throw away the crumbs!
